煎烤義大利風味雞胸肉排佐生菜沙拉

雞肉以帶有甜味及微辛風味香草的義大利香料醃漬煎烤,可完美呈現雞肉的甘甜與義大利山陵風情,清新中帶有歐式風味,最適合想來點輕爽無負擔的時候享用。


材料:

去皮雞胸肉一副、生菜一份、塘心蛋一顆、帕瑪森起士削薄片

辛香料:

純白胡椒粉1小匙、子曰義大利香料2大匙

調味料:

鹽、巴薩米可陳年酒醋

步驟:
  1. 將雞胸肉排以7克鹽、純白胡椒粉、義大利香料及橄欖油(不在材料單中)醃40分鐘。
  2. 生菜洗淨瀝乾水份,切成適合入口的大小。
  3. 雞蛋放入鍋中以淹過雞蛋的水量,大火煮至小滾後轉小火,輕輕攪動煮約6分鐘,將雞蛋撈出泡入冰水1分鐘,即可剝殼,此時蛋黃為膏狀。
  4. 熱鍋加入橄欖油以中火加熱後,將醃好的雞胸肉排放鍋裡煎至表面金黃。
  5. 上菜時建議不切片,直接擺盤並佐以生菜、塘心蛋、起司薄片,最後淋上些許陳年酒醋即可享用。
祕訣:

✔厚度二公分的雞胸肉排二面各煎約3~4分鐘,厚度三公分左右則二面各煎 4~5分鐘。

✔一次煮4顆雞蛋以上,時間要延長30秒。若喜愛流動濃稠的蛋黃,煮5分鐘即可。若雞蛋較大顆要再延長15秒。
